Authentic recipe for Thai yakitori “Gaiyan”

Gai is chicken, yarn is baking.

By the way, in Lao, it is gai, and in Vietnamese, it is ga (chicken pho is pho nga).

・2 tablespoons of soy sauce (preferably Thai or Chinese soy sauce)
・2 tablespoons of alcohol (preferably Shaoxing wine )
・1 tablespoon sugar (preferably palm sugar)

・2 tablespoons lime juice
・2 tablespoons minced garlic
・2 tablespoons of lemongrass (preferably fresh, frozen, powdered, or dried)
・About 3 pieces of Bimaclu (fresh, frozen, and dried, in that order, but drying loses a lot of flavor)
・Add as much chili pepper as you like

Just mix the above ingredients, marinate the chicken thighs, and then grill.


Marinate for at least half a day if possible. You can leave it to soak for a day.

The best way to grill it is with charcoal.

For example, adding fish sauce or oyster sauce will enhance the flavor.

If you want a lighter finish, you can omit the palm sugar.
Changing the soy sauce from Nama-ku (regular soy sauce) to Ro-ku (tamari soy sauce) will increase the richness.
