This time we would like to introduce one of Taiyo Market's main products, sword-cut noodles !
The birthplace of sword-shaved noodles is Shanxi province, but now they have been adapted into various ways and spread all over the country.
As a result, the number of restaurants where you can eat it has increased in Japan, and I think it has become quite popular.
Taiyo Market's sword-cut noodles first started out as dried noodles. This product has been selling well since the beginning, and we have added a larger capacity based on customer requests.
After that, we added semi-uncooked noodles that can be stored at room temperature. Dry noodles sell better, but I personally like them very much.
And this time, frozen sword-shaped noodles have been added.

Many of our frozen food packages are plain, and no matter how I photograph them, they don't really stand out, so please forgive me for that.
Japanese wheat noodle-based frozen foods are boiled and quickly frozen to maintain quality and improve convenience.
On the other hand, this product uses frozen raw noodles.
The quality can be maintained, but the convenience is lacking.
For example, the boiling time for frozen Sanuki udon noodles is 8 minutes compared to 30 seconds, which is the same as boiling dry noodles...😓
However, you can definitely enjoy the unique pirapirakunyukunyu of sword-shaved noodles.
This time I tried making Lanzhou style beef soup.
I'm sure there are many different recipes, but I put cumin, star anise, ginger, cinnamon, herbs, coriander, Chinese pepper, black pepper, garlic, and bay leaf in a soup bag (we should also sell them at our store...), and then added I added dates and goji berries to the soup and simmered it. The base is dashida beef flavor.
I'd like to get it from beef bones, but since I'm not running a restaurant...I'll leave it out here.
However, just using dashida or other beef-based consomme alone will not bring out the depth of Chinese flavor.
I still want herbs and spices. It doesn't take much time.
The finished beef noodles (the meat is beef tendon) were very delicious, but...

Sword-shaved noodles were originally eaten as mixed soba or dressed soba noodles, and when you mix freshly boiled hot sword-shaved noodles with meat miso-like ingredients or our chicken or pork chili oil, that's all you need. A dish with a piping-yummy texture is completed.
You can enjoy the sensual texture of sword-cut noodles in beef bone soup like Lanzhou ramen or Sichuan-style spicy soup.
Even in the authentic Shanxi province, the craftsmen who shave the noodles with swords are said to be valuable.
In Japan, it's even more precious, so people tend to think of it as something to eat out at restaurants, but if you buy it at Taiyo Market, you can enjoy it at home.
The sword-cut noodles sold at our store come in frozen, semi-fresh, dried, and instant varieties...
I felt that half-raw was the easiest to handle and tasted delicious...😅
