These are the crispy, flavoursome shrimp crackers that are often ordered as a starter at Thai restaurants.
Cooking is easy. Just fry in high-temperature oil for about 5 seconds. They will puff up to about 3-4 times their size and become crispy, so be careful not to put them all in the fryer at once.
It's delicious just as is, but it's even better with sweet chili sauce.
