Pad thai
It is one of the most popular Thai dishes and is widely served at street food stalls and restaurants.

Ingredients (for 2 people)
Dried rice noodles: 200g
Chicken (or shrimp, pork, tofu, etc.): 150g
Garlic: 2 cloves (chopped)
Bean sprouts: 1 cup Chives: 1/2 cup (cut as appropriate)
2 eggs 1 lime (cut into wedges)
Peanuts (crushed): 2 tablespoons
Raw onion: 1/4 (thinly sliced)
Edible oil: appropriate amount
Sauce Ingredients Nan Pla (Thai fish sauce): 3 tablespoons
Tamarind paste: 2 tablespoons
Sugar: 2 tablespoons
Water: 2 tablespoons
Red chili pepper (powder): 1/2 teaspoon (adjust to taste)
How to make
- Soak the rice noodles in warm water for about 20 minutes to soften them. Drain the water.
- Make pad thai sauce by mixing fish sauce, tamarind paste, sugar, water, and red chili pepper.
- Heat the oil in a frying pan or wok pan and fry the minced garlic. Add chicken (or other ingredients) and stir-fry until cooked through, then remove.
- Add some more oil to the frying pan and fry the rice noodles. Add the sauce, mix well, and stir-fry until the noodles are seasoned.
- Move the noodles to one side and add the eggs to the other side and stir fry until half-cooked, then mix with the noodles.
- Add bean sprouts, chives, and stir-fried chicken and stir-fry further.
- Place the finished pad thai on a plate and top with raw onions and crushed peanuts. Garnish with lime and squeeze to taste.
